It’s cold/wet/grey. People climbing over snow/ice to cross street and stepping in 4-inch slush/mud puddles. You are depressed. Pick up the phone. Dial 718-855-8838. Ask Nicky’s Vietnamese Sandwiches to make you a big piping hot bowl of Phở (pronounced “Foe”) with beef (here, it’s sliced paper thin and almost raw like carpacio, very tender), chicken, pork chop or tofu. The tofu is excellent, thick and flavorful, even if you are not a tofu person. Order delivery. This is a show-stopping, soul defrosting bowl of Phở. That’s coming from a Phở lover.
Lay on the ground. Do 20 leg lifts, each leg. Thirty stomach crunches. Meditate on Caribbean waters, think of the sun hitting the blue. Twenty push ups.

Place the mound of rice noodles, bean sprouts, cilantro and meat or tofu in a large bowl. Slowly pour over the hot broth. Squirt in the lime, provided. I add Asian hot sauce, the bright red kind.
